Easter Desserts

So, I've spent the past few weeks preparing for Easter brunch at my restaurant.

And by that, I mean, I've been brainstorming because I will literally be spending my entire spring break baking and taking care of Milo, who is having surgery this Saturday. (Say a little prayer for the sweet baby!)

The restaurant I work for thrives off of certain holidays, like any other restaurant does. We literally do four brunches worth of food on the morning of Easter Sunday.

I have four desserts that I bake every single week, and then I have free reign to bake whatever else I want.

WHAT ARE YOU FAVORITE EASTER DESSERTS?

My menu includes these, which the first four are my weekly staples. We have a buffet, so everything is in bite size or cupcake form:

  • Peanut Butter Pie 
  • Key Lime Pie
  • Oatmeal Lemon Cream Bars
  • Strawberry Glazed Cupcakes
  • Pink Lemonade Cupcakes
  • Pineapple Upside Down Cake
  • Lemon Poppy Seed Cookies
  • Coconut Macaroons
  • Easter Chick Cupcakes
  • Carrot Poke Cupcakes
  • Cadbury Egg Cookie Bars
  • Lemon Berry Trifle Parfaits with Strawberry Blondies
  • Coconut Cupcakes (which I plan to color the coconut flakes and decorate them to look like Easter eggs)
When I look at so many different recipes for so long, I sometimes draw a blank. What is something else that's YOUR favorite?

I need ideas!

Alright. So, since I'm officially the Sunday brunch dessert baker lady, I have a zillion ideas for what to do, and they're virtually giving me free reign with it, also. I want to do a different flavor of cupcake every week.

Well...

I have spent various weekends presenting things to my boss and the chef at work, and they finally gave my baked goods a try this past Sunday for brunch.

And guess what...

THEY QUADRUPLED THEIR ORDER FOR NEXT WEEK.

I don't think I have ever been so excited in my life.

And a big thank you to all the prayers and well wishes that have been sent my way.

And of course, the biggest thank you goes to my two worthless baking assistants.

Be still my heart. I love these two.
